Tasty Tuesday: Rustic Italian White Bean & Kale Soup
Baby, it's cold outside! Who doesn't love a warm soup on a chilly night? This is one of our favorites. It has a little of everything and leaves you feeling cozy and satisfied.
Rustic Italian Whitebean and Kale Soup:
1 tablespoon olive oil
3 sweet or mild Italian sausages, casings removed
1 onion chopped
2 garlic cloves minced
3 carrots chopped
1 white potato cubed
1 can white beans, rinsed
4 cups high quality chicken stock or even better bone broth
One bunch of kale, ribs removed and chopped.
salt and pepper to taste
In a medium dutch oven heat oil and add sausage. Break up sausage while browning it using a wooden spoon. Add carrots, onion, gralic ,and potato and sautee. Pour the stock over the sausage and veggie mix add beans and bring to a boil, reduce heat and let simmer for 45 minutes to an hour. Ten minutes before serving add the kale and salt and pepper. Enjoy and stay warm!
