Tasty Tuesday: Grilled Artichokes

Grilled Artichokes

Artichokes…they seem intimidating with their rough exterior but really they are soft yummy goodness on the inside. Everyone has had artichoke dip but it’s full of cream and cheese and is delicious but far from healthy. This simple recipe for grilled or broiled artichokes will have your palate thanking you and begging for more!

Ingredients:

  • 2-4 Artichokes

  • EVOO

  • Fresh Garlic

  • Coarse Salt

Start by boiling some water on the stove. Trim the top ½-1 inch off then cut your artichokes in half and remove the furry center. This can be done with a spoon or a knife. Immediately mist EVOO over the cut side. If you do not have a mister then drizzle the EVOO over the open side. Place the artichokes into the boiling water for approximately 17 minutes. If your artichokes are larger then boil for 20-22 minutes.

After boiling remove the artichokes with tongs and place them cut side down on a towel or paper towels so they drain. Once drained well, mist or drizzle with EVOO. Slice the fresh garlic very thin and slip it between every few petals. Sprinkle with coarse salt.

The artichokes are ready to be grilled or broiled if it’s too cold outside to fire up the grill. Grill on medium or broil on low for approximately 5 minutes per side. You want nice grill marks to show and the artichoke to crisp up.

To eat simply pull the petals off one at a time and enjoy the meaty part. You can make a delicious garlic aioli dip or dip in melted butter or enjoy straight off the grill! These make the perfect warm appetizer for any season.
