Snack Alert!

A quick snack to make, eat, and have easily accessible- especially during those early days with a newborn and/or breastfeeding or even after you are out of the baby stage but always on the go!

Try this amazing, no-bake, cookie recipe that meets all of those requirements (and can introduce peanuts to your baby early on, possibly reducing the risk of allergies later! *)

Ingredients:

½ cup peanut butter

¼ cup maple syrup (or agave)

¼ cup olive oil

1 teaspoon vanilla extract

2 cups rolled oats (can use Gluten Free oats too!)

¼ cup mini chocolate chips (to make this vegan- get vegan chocolate chips!)

In a bowl, add the 2 cups of oats and set aside. On the stovetop, bring to warm (not boil) the peanut butter, maple syrup, and olive oil. Continue to stir as you add ingredients ensuring that they do not burn on the bottom of the pan. Upon seeing that the ingredients have blended together, take off the stovetop and pour over the oats, mixing together the oats and peanut butter mixture until the oats are all covered. Place wax paper on a plate, and begin to place spoonful’s of the oats onto the wax paper. Place chocolate chips in to taste. Put in the fridge to cool.
