Tasty Tuesday: Fast Pumpkin Muffins


The start of September means fall food is officially acceptable. And if you like pumpkin, this is for you.

If you're a do-it-from-scratch kind of cook, just go ahead and forward this to a friend who isn't! Because this is a BOX MIX recipe! (Or stick it in your back pocket for the next school bake sale or neighbor who needs a surprise!)

These are super fast and great for after school snacks. It has an entire can of pumpkin in it, which is loaded with Vitamin A. 250%! Pumpkin is great to bake with - it just makes things a bit stickier.

Ingredients:

1 15-oz can of pumpkin puree

1 box of spice cake mix

optional: chocolate chips or cream cheese

Directions:

1. Combine cake mix and pumpkin. Mix well.

If you are adding chocolate chips, now is the time! If you want cream cheese. when filling the muffin tin, fill half with batter, add a dollop of cream cheese, then top with more batter.

2. Bake for 15-20 minutes in a 350 degree oven.

They might not look done because they don't change color much or brown, but should feel a bit firm to the touch when ready.
