School's Out Asian Slaw


Want a fun, tasty salad to make in a flash now that the kiddos are out of school? Try this Asian-inspired recipe!

Ingredients

1 package of broccoli slaw (or thinly shred broccoli, carrots and red cabbage, 4 cups total)

3 packages of ramen noodles, oriental flavor - keep ONE seasoning packet

4 tablespoons of canola oil

4 tablespoons of sugar

1/2 teaspoon of white pepper

1 cup toasted, slivered almonds

6 tablespoons balsamic vinegar

1 handful of dried cranberries

optional: 1/4 cup chopped green onions

Directions

1. Place ramen noodles in a big bowl and pour bowling water over them. Follow package cooking time. Add one seasoning packet and mix. Cut up noodles into smaller pieces. Drain after noodles are soft.

2. Mix in all other ingredients. (How easy was that?!)

3. Chow down!

Options: try adding sunflower seeds instead of almonds
