Tasty Tuesday: Tomato Salad

On this Tasty Tuesday we are full of sunshine but also full of a cold snap! If the cold snap has you down, perk up with this vibrantly colored tomato salad! It screams beautiful weather and is a fresh view of what is soon to come.

Tomato Salad is so easy yet so delicious. It can be eaten as a meal, a snack, a side, a topping, an appetizer, really quite versatile! One of my favorite parts about it is you only need a cutting board, a knife, a bowl, and a spoon! Easy to make, easy to clean up!

Ingrediants

  • 1-1.5 lbs of mixed tomatoes

  • ¼ Red onion (sliced thin)

  • 3-4 medium/large basil leaves (sliced thin)

  • 2-3 Tbsp EVOO

  • 1 Tbsp Balsamic Vinegar

  • Pinch of Sea or Kosher Salt

The ingredient amounts are personal preference. If you love fresh basil, add more. If you love balsamic, add more! The beauty of this salad is it can be changed up to fit your taste!

Start with a batch of mixed tomatoes. They make it pretty and change the taste up a bit. If you cannot find mixed tomatoes then red cherry or red grape will work too. Slice the tomatoes in half. Now add in the fresh basil, thinly sliced red onion, EVOO, balsamic, and a pinch of salt (optional). Give it a good toss and let marinade in the refrigerator for an hour or so. If you don’t have time for that, go ahead and enjoy!

A few options to change it up:

  • Add a chunk of fresh mozzarella with it as an appetizer.

  • Top balsamic grilled chicken with delicious tomato salad.

  • Add English Cucumber (remove seeds) in slices before marinating.

No matter how you enjoy this easy, yummy salad; remember summer is just around the corner along with warm weather!
